Peanut Butter Popcorn

I am a huge fan of popcorn. I always have a bag of kernels in the cupboard so that I can snack on them to my heart's content! Popcorn kernels are so cheap and easy and, if you put the right topping on, they can be healthy too!

This recipe definitely isn't top of the healthy snacks list but it is really tasty, really easy and definitely one you can whip up for a tasty treat to accompany a cosy film night!


Ingredients
3 heaped tbsps of Popcorn Kernels
Vegetable Oil
Salt
6 heaped tbsps of honey
4 heaped tbsps of sugar 
6 heaped tbsps of peanut butter (should be free of added sugar) 
Heat a large pan over a medium heat and fill the bottom with a thick layer of vegetable oil. Once the oil is heated, add the popcorn, and give the saucepan a shake to make sure the kernels are evenly spread.
Keep giving the saucepan a little shake every minute or so and once the popping slows take the pan off the heat. 
Pour the popcorn into a large bowl to cool.
Mix the honey and sugar in a small saucepan and bring to the boil, leave it to simmer for about two minutes, stirring constantly. Add the peanut butter and stir until the peanut butter is melted. For extra taste you can add vanilla extract at this point but I didn't have any!
Lightly salt the popcorn to taste - sweet and salty popcorn is very on trend at the moment!
Immediately pour the peanut butter caramel over the popcorn and stir until it is all coated. Try and let it cool for 10 minutes before serving. 
If you aren't a sweet-toothed being you can always swap the vanilla extract for sirachi sauce! 

The only thing left to do is tuck in....
